This traditional peppery beef stew has intense heat and flavors and a long history.
The common story is that the kiln workers (or fornacini) who baked the terra cotta tiles for the world-famous Duomo in Florence were the ones who first created the hearty stew. They mixed roughly cut beef shank, salt, red wine and a lot of black pepper and slow cooked them in terracotta pots in a corner of their furnace until the meat was tender and full of flavor.
